Canola oil, walnut oil and soybean oil are options that will change the flavor a bit. I have tried it with extra virgin olive oil and I find the olive taste overpowering. If you prefer to use olive oil, I recommend using a light version such as this one rather than a regular, heavier extra-virgin olive oil if you want the best balsamic vinaigrette flavor.

It will solidify a bit when cold, so be sure to set it out at room temperature for 15-20 minutes, then shake well to fully emulsify before serving.
