Sweet vinegar and oil salad dressing is a twist on the classic version. It's ideal for enhancing fruit salads, as well as sweetening up bitter ingredients.

½ cup vegetable oil ¼ cup white balsamic vinegar 2 tablespoons lemon juice fresh squeezed 1 tablespoon dijon mustard 1 clove minced garlic 1 tablespoon honey ¼ teaspoon kosher salt ¼ teaspoon pepper
Add all ingredients to a small mixing bowl
Stir vigorously with a whisk until fully combined
Taste on a piece of lettuce and adjust ingredients to your liking.
Pour into a mason jar or cruet with a tight fitting lid; shake vigorously before pouring on to salad.
Store in the refrigerator in a jar with a tight fitting lid or other airtight container for up to 2 weeks.
Variations:
Use apple cider vinegar in place of white balsamic vinegar
Use red wine vinegar, sherry vinegar or any wine vinegar in place of white balsamic vinegar.
Substitute maple syrup in place of honey for a slightly less sweet taste.
Add some pureed berries such as raspberries or strawberries for a fruity flavor.
