Southern Style Cornbread

1 cup yellow corn meal

1 cup all purpose flour

1/4 cup sugar (optional)

1 tablespoon baking powder

1 teaspoon salt

1 cup milk

1/3 cup vegetable oil

1 egg


Preheat oven to 400 degrees. Generously grease an 8 x 8 baking pan.

  1. In a large bowl, mix together corn meal, flour, sugar (if using), baking powder and salt.
  2. In a small bowl, mix together milk, oil and egg. 
  3. Pour milk mixture into dry ingredients, stirring only until fully combined. Do not overmix. 
  4. Transfer to greased 8 x 8 pan. Bake at 400 degrees 20 minutes or until wooden toothpick inserted in center comes out clean.



You can substitute a well-oiled 8" round cast iron skillet for the 8 x 8 baking pan

You can also substitute a greased muffin pan to make individual corn muffins
